- 2 cups masa harina
- 1 cup low-sodium vegetable broth
- 1 cup canned coconut milk
- 2 tablespoons amaranth seeds (see Tips)
- 2 tablespoons honey
- ½ teaspoon salt
- ¼ teaspoon ground pepper
- 12 banana leaves, thawed if frozen
- 2 tablespoons extra-virgin olive oil
- 1 lb ground beef
- 1 cup tomato sauce
- 1 bell pepper chopped
- 1 scotch bonnet pepper without seeds, chopped
- 1 small onion chopped
- 2 cloves garlic
- 1 sprig parsley
- 1 sprig recao/cilantro or ancho/culantro
- 1½ tsp salt
- ¼ tsp pepper
- 3 tbsp olive oil
- Place the water on heat to boil.
- In a medium mixing bowl, combine masa harina, broth, coconut milk, amaranth, honey, half teaspoon salt, and pepper.
- Next, cut the banana leaf or corn husk into a 6-inch square. Then apply oil to a leaf square. Form a quarter cup of the dough into a 4-by-1-inch log and place it on the leaf.
- Roll the dough into a square in the banana leaf. Close the ends by twisting them together and securing them with kitchen string. Repeat with the remaining leaves and filling to make as many guanimes as you like.
- Place the guanimes in a pot of boiling water and cook for 45 minutes, or until the leaves begin to pull away from the dough.
- While the guanimes are cooking. Blend the bell pepper, scotch bonnet, onion, garlic, parsley, cilantro, ancho, pepper, and salt in a food processor until smooth.
- Mix seasoning paste into ground hamburger until well combined.
- If you have other faces of the cooker available, brown the hamburger separately over medium heat. Cook and stir until the hamburger is cooked through.
- When the meat has browned, add the tomato sauce and continue to cook, stirring constantly, until the liquids have evaporated. Season with salt and pepper to taste.
- Take the pan off the heat.
- When ready, drain the guanimes. Allow to stand for 10 minutes or until cool enough to handle. Remove the wrapper and serve with the prepared stew.
